A Peer Roundtable for Retail and Hospitality Leaders, Hosted with Greggs.

AI is creating significant opportunities for retailers to transform customer experiences, empower colleagues and improve operational efficiency. But as adoption accelerates, it also introduces new questions around security, data, governance and risk.
Join Quorum Cyber, Greggs and a select group of senior retail technology and security leaders for an exclusive roundtable exploring how retailers can build on today’s cyber resilience foundations to prepare for an AI-enabled future.
Drawing on Greggs’ real-world cyber resilience journey, we’ll explore what organisations have learned from strengthening their security posture and, crucially, what needs to change as AI becomes increasingly embedded across the business.
Wednesday 2 December 2026 | 1:00–4:30pm
Sun Street Hotel, London EC2A 2EP
Lunch and networking included.
Hosted with Tony Taylor, IT & Business Change Director at Greggs, and featuring specialists from Quorum Cyber’s Data & AI and Threat Intelligence teams, alongside Microsoft, the round table brings together leaders responsible for technology, cyber security, information governance, risk and digital transformation to discuss the practical realities of preparing data for AI adoption.
This is not a product demonstration or sales presentation. It's an opportunity to step away from the day-to-day, hear how peers are approaching similar challenges, discuss what's working (and what isn't), and explore practical ways to secure the foundations AI depends on.
Attendance is intentionally limited to encourage open discussion and meaningful peer engagement.

The round table will take place at Sun Street Hotel, a boutique hotel located between the City and Shoreditch.
The venue offers a polished and comfortable setting for an open, practical discussion among senior retail security and technology leaders. With lunch provided by the renowned LIMA Shoreditch.
The venue is within walking distance of Liverpool Street station.
